Airy and dissipating head. Freshly harvested hay in color. Rustic apricot jam and barnyard aromas. A light wheat, apricot and sublet honey-like sweetness on the mid-palate with a well rounded dry finish. Brewed with Simpson Golden Promise, Crisp Torrified Wheat and German Northern Brewer hops and a Belgian yeast strain. Aged for 8 months on American Oak barrels with Brettanomyces Bruxellensis and Brettanomyces Lambricus and then aged on apricots for another 4 months.
